Corned Beef Hash

Corned Beef – 350 gm, diced
Butter – 50 gm
Oil - 1 Tablespoon
Potato – 275 gm, boiled and sliced
Onion – 2, medium, chopped
Salt – to taste
Pepper – to taste
Fried eggs - to garnish

Method
Heat half of the butter and oil in a large frying pan.
Gently fry the sliced potatoes, turning occasionally until brown (take care not to mash them).
Remove from the oil and keep warm.
Add the remaining butter to the pan and fry the onions until golden.
Add the corned beef, potatoes, salt and pepper and heat thoroughly, turning all the time.
Serve hot, garnished with fried eggs on the top.
