Cheese and Onion on Toast

British vegetarian dish.

Ingredients  (Click here for measurement conversion)

Grated cheddar – 110 gm

Unsalted butter – 55 gm

Whole milk - 1/4 cup

Corn flour - 1 Tablespoon

Ground pepper – as needed

Salt - to taste

Red onion – 1 medium, finely chopped

Toasted bread - 4

Method

• Melt butter in a heavy based saucepan.

• Add ground pepper and do not allow butter to brown.

• Add the corn flour and beat constantly to mix well.

• Gradually add the milk.

• Continue to cook over a medium heat until the sauce thickens.

• Add the grated cheese and mix in well.

• Add the chopped onions and cook gently for 2 - 3 minutes.

• Spread the cheese and onion mixture over the toasted bread.

• Place under a pre heated grill until golden brown.

• Serve hot.
