Cheese Onion Pie

British vegetarian dish. Served mainly as side dish

Ingredients (Click here for measurement conversion)
Cheddar cheese – 600 gm, shredded
Onion – 4 medium/large, chopped
Pastry – as needed, for upper and lower crusts

Method
Boil onions in a little water.
When transparent, drain and reserve the liquid.
Mix shredded cheese into hot onions.
If mixture seems a little dry, add a little of the reserved stock.
Pour mixture into unbaked pie shell and cover with pastry top.
Bake at 350 F until shell is golden brown.
Serve hot or cold with a salad and pickle.
