Chilled Avocado Soup

Ingredients (Click here for measurement conversion)
Vegetable Stock - 1 litre
Avocados - 2, ripe
Lemon Juice - 1 Tablespoon
Egg Yolk - 1
Salt - to taste
Single Cream - 4 Tablespoons
Black pepper - to taste

Method
Cut the avocados lengthwise in two halves and remove the stone.
Scoop out the avocado flesh and place in a bowl together with the egg yolk and cream.
Mash well.
Heat the stock in a saucepan and bring to the boil.
Remove stock from heat.
Gradually add the avocado mixture to the stock, whisking vigorously.
Add salt and pepper as per taste.
Chill for at least 1 hour before serving.
