A method of steaming foods in a pot with a tightly covered lid or a sealed pot. Dum means "to steam" or "mature" a dish. A popular vegetarian delicacy is "Aloo Dum". Earlier the utensil used to be sealed with atta (dough). This helped in capturing the moisture within the food as it cooked slowly over a charcoal fire. Charcoal was also placed on the lid to ensure better cooking. The food continued to cook in its own steam, retaining the natural flavour. |
