Indian pancake (non-sweet) with vegetable stuffing. This is a popular delicacy from southern part of India and prepared from rice and urid dal. Too add to the savoury, it is served with coconut chutney and sambar.

Dudhi

 

Indian sweet gourd

Dum

 

A method of steaming foods in a pot with a tightly covered lid or a sealed pot. Dum means "to steam" or "mature" a dish. A popular vegetarian delicacy is "Aloo Dum". Earlier the utensil used to be sealed with atta (dough). This helped in capturing the moisture within the food as it cooked slowly over a charcoal fire. Charcoal was also placed on the lid to ensure better cooking. The food continued to cook in its own steam, retaining the natural flavour.
