Chicken Herb Soup

 

Features

Non-vegetarian dish, served as starter

 

Ingredients  (Click here for measurement conversion)

Shredded boneless chicken pieces - 100 gm

Chicken stock or water - 1 litre

Finely chopped coriander leaves - 1 Tablespoon

Mint leaves - 6, finely chopped

Finely chopped spinach - 1 cup

Spring onion - 2, finely chopped

Nutmeg powder - 0.5 teaspoon

White flour - 1 Tablespoon

Butter - 1 Tablespoon

Salt - to taste

White pepper - to taste

Fresh cream (optional) - 1 Tablespoon

 

Method

  • In a pot combine the chicken stock or water with the chopped herbs.

  • Bring to a boil and simmer for about 10 minutes or till the herbs are tender.

  • Cool and blend to a puree.

  • Heat half the butter in a pan and stir-fry the shredded chicken pieces till tender.

  • Remove from the pan and keep aside.

  • In the same pan heat the remaining butter, add the white flour and stir-fry for about 1 minute.

  • Add the chicken pieces, herb puree, white pepper powder and salt.

  • Simmer on medium heat while stirring for about 4 minutes.

  • Beat the cream and stir into the soup.

  • Heat the soup thoroughly.
