Coconut Rice

 

Features

Rice item, served as main course, suitable for vegetarians

 

Ingredients  (Click here for measurement conversion)

Basmati Rice - 1 kg

Coconut - 1¾ kg, dessicated

Lentils (Moong Dal) - 10 gm

Lentils (Mashkalai Dal) - 15 gm

Red chillies - 5 gm

Mustard - 1 teaspoon

Green chillies - 2 teaspoon, chopped

Cashew Nut - 20 gm

Oil - 80 ml

Salt - to taste

 

Method

  • Boil the rice with salt added to it.

  • Heat oil in a pan and fry the cashew nuts.

  • Keep them separately.

  • Fry the lentils (both types) and spices.

  • Mix the coconut, fried cashew nuts, fried lentils and spices with the rice in low heat.

  • Once thoroughly mixed, remove from heat.

  • Try not to heat it for too long.

  • Serve hot with any Indian vegetarian or non-vegetarian curry.
