Apricot Delight

Features
Sweet dish, served as dessert, suitable for vegetarians, a delicacy from Hyderabad (in southern India)

Ingredients (Click here for measurement conversion)
Dried apricots - 300 gm
Water - 750 ml
Sugar - 150 gm
Almonds, chopped - 2 Tablespoons
Double cream - 4 Tablespoons
Edible silver foil - 2 sheets
|

Method
Mix the apricots and water and stew them on a low heat until soft and pulpy.
Make a syrup by boiling the sugar and some of the water from the cooked apricots.
The syrup should be fairly thick.
Remove the stones from the apricots and discard.
Mix the fruit into the syrup and place into small dessert bowls.
Sprinkle the almonds and drizzle the cream over each serving.
Place a piece of silver foil on top of each bowl and serve chilled.
