Aloo Baigan Curry

 

Features

Vegetable dish, can be served as side dish or main dish

 

Ingredients  (Click here for measurement conversion)

1 Onion, chopped

2 teaspoons Oil

3 Garlic cloves

Salt to taste

Fresh lime juice

1 Tomato, diced

1 teaspoon Chilli powder

0.5-1 teaspoon Garam masala

1 Potato, cubed

1 Aubergine, cubed

0.5 cup Water

Fresh cilantro leaves – for garnishing (optional)

Plum chutney – served as a relish (optional)

 

Method

  • Heat oil in a saucepan.

  • Saute chopped onion in oil until brown.

  • Meanwhile make a paste of garlic cloves with a few grains of salt and enough fresh lime juice to form a paste.

  • Add garlic and tomato, and stir to mix well.

  • Saute until it forms a sauce.

  • Add red chilli powder, garam masala, and salt.

  • Cook it for a couple of minutes.

  • Add aubergine and potato cubes, and stir to coat.

  • Add 0.

  • 5 cup water and reduce heat.

  • Let it cook, stirring occasionally, until vegetables are tender.

  • Serve hot, garnished with cilantro leaves alongwith plum chutney.
