Aloo Baigan Curry

1 Onion, chopped
2 teaspoons Oil
3 Garlic cloves
Salt to taste
Fresh lime juice
1 Tomato, diced
1 teaspoon Chilli powder
0.5-1 teaspoon Garam masala
1 Potato, cubed
1 Aubergine, cubed
0.5 cup Water
Fresh cilantro leaves – for garnishing (optional)
Plum chutney – served as a relish (optional)

Method
Heat oil in a saucepan.
Saute chopped onion in oil until brown.
Meanwhile make a paste of garlic cloves with a few grains of salt and enough fresh lime juice to form a paste.
Add garlic and tomato, and stir to mix well.
Saute until it forms a sauce.
Add red chilli powder, garam masala, and salt.
Cook it for a couple of minutes.
Add aubergine and potato cubes, and stir to coat.
Add 0.
5 cup water and reduce heat.
Let it cook, stirring occasionally, until vegetables are tender.
Serve hot, garnished with cilantro leaves alongwith plum chutney.
