Ingredients for "Date And Walnut Loaf" (Click here for measurement conversion) 8 oz block dates, cut into small chunks
Pinch baking soda
¼ pint boiling water
3 oz unsalted butter
3 oz caster sugar
1 egg
8 oz self-raising flour
3 oz walnuts, roughly chopped
Method for "Date And Walnut Loaf"
Add boiling water to dates with baking soda. Stir and set aside. Cream butter and sugar. Beat in egg. Stir in flour and nuts and then the dates. Place in a greased and lined loaf tin and bake at 180°C for 50 minutes. Wrap in foil and keep for at least a day before cuttingServe spread thickly with butter (NOT margarine!).
