Ingredients for "Freezer Zucchini Bread Batter" (Click here for measurement conversion) 4 cup Zucchini, shredded
6 Eggs
2 cup Oil
2 teaspoon Salt
3 cup Brown Sugar
6 teaspoon Vanilla
6 cup Flour
6 teaspoon Cinnamon
1 cup Nuts, chopped
TO BAKE
1/2 teaspoon Soda
1/2 teaspoon Baking powder
Method for "Freezer Zucchini Bread Batter"
Put all in a processor and blend well. Line loaf pans (9x5) with plastic and fill loaf pan 2/3 full. Freeze. Remove from pans and wrap in plastic. To bake, remove plastic and thaw out. Add 1/2 teaspoon soda and 1/2 tsp baking powder per loaf. Grease pan and pour in batter. Bake at 350 degree F. approx 1 hour.
