Burgers
1 Tablespoon Butter or Margarine
2 Stalks Celery, chopped
2 medium Carrots, shredded
1 small Red Onion, chopped
1/2 teaspoon ground Cumin
1/4 teaspoon fresh ground Pepper
1/4 teaspoon Salt
1/2 lb ground Turkey
1/2 lb Turkey Sausage, casings removed

Special Sauce
1 cup plain nonfat Yogurt
2 Tablespoons minced fresh Parsley or 1/2 teaspoon dried Parsley
1/2 teaspoon ground Cumin
1/4 teaspoon Salt
1/8 teaspoon fresh ground Pepper
6 small Whole-wheat Pita Bread, toasted,split
6 Leaves Red Leaf Lettuce
6 slices Tomatoes




Method for "All Turkey Burgers"

Make Burgers:- In nonstick skiller, over medium heat, melt butter. Add vegetables, saute 8 minutes, or until very tender. Add cumin, pepper, and salt; mix well. Remove from heat and allow to cool. Remove 1/4 cup of vegetables and set aside in medium bowl. Combine remainder vegetables with turkey and sausage; mix well with hands. Form into 1/2 inch thick patties. Broil burgers 4 to 6 inches from heat, for 12 minutes, turning once. Make Sauce:- Into bowl with reserved vegetables, stir in all the sauce ingredients. Serve burgers in pitas (or on buns) with lettuce, tomatoes, and sauce.
