Chicken and Shrimp Jambalaya recipe

Ingredients   (Measurement Conversion Calculator)

1 tbsp chopped parsle
6 oz ham, diced 1/2-inch
1 stalk celery, diced 1/2-inch
2 tbsp vegetable oil
1 tsp salt
8 oz andouille sausages, diced 1/2-inch
1 small onion, diced 1/2-inch
1/2 tsp shrimp boil seasoning
1 lb shrimp, medium sized, peeled and cleaned
12 oz tomato sauce
1 small green pepper, diced 1/2-inch
3 cups cooked long-grain rice
1 small red pepper, diced 1/2-inch
8 oz chicken breasts, diced 1/2-inch
16 oz fresh chicken stock


Directions

Saute chicken breast and shrimp together with oil in a heated cast iron pot for 1 min. Add celery, peppers and onion and cook 2 min more. Then add ham, sausage, chicken stock, tomato sauce and seasonings. Cook for 18 to 20 min at low heat. Add in rice and mix well. Garnish with chopped parsley.
