1/2 cup Margarine, softened
2 cups White Sugar
1/2 cup Brown Sugar
3 Eggs
3 cups Buttermilk
1/4 cup Molasses
3 cups natural Bran
4 cups whole Wheat Flour
2 teaspoons Baking Powder
2 teaspoons Baking Soda
1 1/2 teaspoons Cinnamon
1 teaspoon Ginger
1/2 teaspoon Allspice
1/4 teaspoon ground Cloves
1/4 teaspoon Salt
3 Apples, peeled, cored and chopped coarsely
2 Tablespoons Lemon Juice
1 1/2 cups Walnuts, chopped coarsely




Method for "Apple Cinnamon Bran Muffins"

Sprinkle apples with lemon juice to avoid discolouration. Set aside. Mix first six ingredients well in a large mixing bowl. Set aside. Combine bran, flour, baking powder, baking soda, spices, and salt. Add to wet ingredients, stirring just until combined. Fold in apples and walnuts. Remember, overmixing makes tough muffins. Fill 30-36 greased muffin tins 3/4 full and bake at 350F for 20-25 minute.
