Algerian Rice Salad recipe

Ingredients   (Measurement Conversion Calculator)

1/2 Onion, chopped

GARNISH
1/4 cup Vinegar
1 teaspoon chopped Chives
Salt and Pepper

Vinaigrette
1 1/2 Green Peppers, chopped
1 (2 ounce) jar Pimientos, chopped
Mushrooms
Hard-boiled Egg
1 teaspoon chopped Parsley
2 cups Rice, cook and chilled
Olives
1 teaspoon Dijon Mustard
3/4 cup Salad Oil


Directions

Mix together all vinaigrette ingredients with wire whisk. Add pepper, pimento and onion to chilled rice. Mix. well. Pour Vinaigrette over rice. Add salt and pepper to taste. Place in 8 or 9-inch pan. Press firmly. Chill. Invert on serving plate. Decorate with hard-cooked eggs,. mushrooms or olives.




Served as main course. Vegetarian dish. Speciality: Occasion - Dinner Party. It is Low Sodium, Low Cholesterol, Low Protein diet.

Preparation time: 10 minutes
Serves: 6
