Ingredients (Measurement Conversion Calculator) 4 medium Ripe Tomatoes, chopped
1/2 cup Black Olives, pitted and halved
2 sweet Red Peppers, chopped fine
1 teaspoon chopped fresh Basil
3/4 cup sliced Cucumbers
1 Tablespoon Vinegar
2 small Onions, sliced thin
Salt and Pepper
2 hard-boiled Eggs, quartered
3 Tablespoons Olive Oil
6 Anchovy Fillets, chopped
Directions
Place all ingredients into a large salad bowl and toss gently. May be served with pita bread.
