Ingredients for "Bread Upma (microwave)"   (Click here for measurement conversion)

6 big Bread Slices, cut fine
1 cup Yoghurt, beaten well
2 Tablespoons Oil
1 teaspoon each of Mustard and Cumin seeds
4 Green Chillies, finely chopped
6 Curry Leaves
1 big Tomato, finely chopped
1/2 teaspoon each of Turmeric powder and Chilli powder
Salt to taste
Finely chopped, fresh, Coriander to garnish




Method for "Bread Upma (microwave)"

Stir the bread pieces in yoghurt and keep aside for about 10 minutes. Pour the oil in a microwave-safe deep bowl. Toss in the mustard seeds and microwave covered on high (100%) power for about 4 minutes till they splutter. Toss in the cumin seeds and stir till they change color. Add the curry leaves, chopped green chillies and tomatoes. Mix well and microwave uncovered on high (100%) power for about 3 minutes or till the tomatoes are cooked and soft. Add the bread, salt, turmeric and chilli powders. Mix well. Microwave covered on high (100%) power for about 2 minutes. Cover and keep for some time before serving. Serve hot garnished with chopped fresh coriander along with Onion Chutney (Pyaz ki Chutney).

Tips:

Chopped onions can be added in step 3.
When the microwave cooking time for a step exceeds 2 minutes, it is highly recommended the contents be checked and stirred at regular intervals to avoid burning of food. Standing time is a very important step as it completes the microwave cooking process of a dish. Ideally, allow the dish to stand for about 5 minutes before serving.
