Ingredients for "Ahi with Thai Dipping Sauce" (Click here for measurement conversion) Ahi steaks - 4 (each 6 oz)
Peppercorns - 1 Tablespoon, white, cracked
Sesame seeds - 1 Tablespoon
Kosher (coarse) salt - 1 teaspoon
Lime juice - 1/3 cup
Soy sauce, dark - 3 Tablespoons
Fish sauce - 1 Tablespoon
Sugar - 2 teaspoons
Jalapeno peppers, diced - 1 teaspoon
Method for "Ahi with Thai Dipping Sauce"
For the rub In a small saucepan combine the peppercorns, salt and sesame seeds. Roast this mixture until the seeds are lightly toasted, for about 5 minutes.
For the sauce Whisk together
all remaining ingredients. Lightly oil both sides of the Ahi and sprinkle on the rub. Press lightly into flesh. Grill over high, direct heat. Sear each side for about 1-2 minutes. Serve with individual portions of the sauce.
