1/2 teaspoon ground Turmeric
1 lb Potatoes, peeled and cubed
1/2 teaspoon Cayenne
2 Tomatoes, chopped
1 Onion, chopped
1/4 cup Vegetable Oil
1 teaspoon Salt
1/4 teaspoon Cumin
Directions
Lightly brown onion in oil in medium skillet. Stir in salt cayenne turmeric and cumin. Add potatoes and cook 20 minutes stirring occasionally. Add tomatoes, cover and cook untill potatoes are soft about 20 minutes.
Served as side dish. Vegetarian dish. Speciality: Low Cholesterol, Low Sat. Fat, Low Calorie, Low Protein diet.
